In a medium skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms, onion, garlic, and salt for 5 minutes, or until the mushrooms are soft and lightly browned. Stir frequently. Add in the lemon juice, pepper, and snap peas. Cook for an additional 5 minutes.

In a jar with tight-fitting lid, combine all dressing ingredients; shake well. If you don’t have a container with a tight-fitting lid, place ingredients in a small mixing bowl and mix together with a whisk.
