Snap Peas with Mushrooms and Onions

Serves 4

Ingredients

  • 1/2 lb. fresh snap peas, trimmed
  • 2 Tbsp. olive oil
  • 4 oz. mushrooms, sliced
  • 1/2 cup onion, thinly sliced
  • 1 clove garlic, minced
  • 1/8 tsp. salt
  • 2 tsp. lemon juice
  • Black pepper, to taste

Instructions

  1. In a medium skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms, onion, garlic, and salt for 5 minutes, or until the mushrooms are soft and lightly browned. Stir frequently.
  2. Add in the lemon juice, pepper, and snap peas. Cook for an additional 5 minutes.
