Roasted Beet & Apple Salad

Ingredients

  • 3 small beets, peeled and quartered
  • 6 cups kale, chopped
  • 1 apple, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1 tbsp olive oil
  • 1/3 cup salad dressing (optional)

Instructions

  1. With cooking spray, lightly spray a piece of tin foil. Place beets on the oiled side of the foil and loosely wrap foil around beets to make a sealed package. Put beets on a baking sheet and roast in the oven at 400° F for 30-45 minutes or until tender.
  2. In the last 5 minutes of roasting, spread walnuts on the baking sheet alongside the beets to toast. Remove beets and walnuts from the oven. Carefully remove beets from foil and allow to cool. When beets have cooled, slice them into thinner wedges.
  3. Add kale into a large bowl and combine with olive oil. Massage the kale with oil for about two minutes, until the leaves are slightly softened.
  4. Add apple slices, beet slices, and walnuts to the bowl and toss with your choice of dressing.
