Portabello Pizzas

Serves: 3-66 portobello mushrooms 2 tbsp. olive oil 2 tsp. garlic, minced 6 tsp. Italian seasoning 3/4 cup pizza sauce 1.5 cups reduced-fat shredded mozzarella cheese (or pizza blend) 18 large or 30 miniature pepperoni 6 cherry or grape tomatoes, sliced Salt and pepper to taste

Ingredients

  • 6 portobello mushrooms
  • 2 tbsp. olive oil
  • 2 tsp. garlic, minced
  • 6 tsp. Italian seasoning
  • 3/4 cup pizza sauce
  • 1.5 cups reduced-fat shredded
  • mozzarella cheese (or pizza blend)
  • 18 large or 30 miniature pepperoni
  • 6 cherry or grape tomatoes, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to broil setting or high heat. Move oven shelf to the center of the oven.
  2. Clean mushrooms and remove stems. Combine oil, garlic, and 4 teaspoons of seasoning together in a small bowl. Brush the outside of each mushroom with the oil mixture and place each mushroom, oil side down, on a lightly greased baking sheet.
  3. Fill each mushroom with 2 tablespoons of pizza sauce, 1/4 cup of mozzarella cheese, pepperoni, and tomato slices. Broil for 8-10 minutes, until cheese has melted.
  4. To serve, sprinkle with salt, pepper, and the remaining Italian seasoning.
