Mediterranean White Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 6 cups low sodium vegetable broth
  • 2 tsp Greek or Italian seasoning
  • Salt and black pepper (to taste)
  • 3 (15-ounce) cans white beans, such as
  • navy, cannellini, Great Northern, etc.
  • 2.5 cups mustard greens or kale
  • Grated parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium high heat. Add onions and cook about 5 minutes. Add the garlic, carrots, celery, seasoning, salt, and pepper. Cook for an additional 2-3 minutes.
  2. After draining the beans, add vegetable broth and beans to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes to combine all of the flavors together.
  3. Stir in the greens and continue to simmer until wilted 3. (about 2 minutes).
  4. Remove from heat and add in any extra salt or seasoning to taste. Sprinkle grated parmesan cheese, if desired, and serve immediately.
