- In a large pot, heat olive oil over medium high heat. Add onions and cook about 5 minutes. Add the garlic, carrots, celery, seasoning, salt, and pepper. Cook for an additional 2-3 minutes.
- After draining the beans, add vegetable broth and beans to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes to combine all of the flavors together.
- Stir in the greens and continue to simmer until wilted 3. (about 2 minutes).
- Remove from heat and add in any extra salt or seasoning to taste. Sprinkle grated parmesan cheese, if desired, and serve immediately.
