Healthy Peach Crumble

Ingredients

  • 2 peaches, chopped
  • 2 tsp. cinnamon
  • 2.5 tbsp. coconut oil
  • 1/2 cup oats
  • 1/2 tbsp. honey
  • Pinch of salt
  • 1 tbsp water
  • 2 cups vanilla Greek yogurt (optional)

*If you do not have a food processor, add dry ingredients to a plastic bag and roll with a rolling pin. Then, move to a bowl and mix in water and honey

Instructions

  1. Add oats, 1 tsp cinnamon, 2 tbsp coconut oil, honey, salt, and water to a food processor* and blend well. Add mixture to a non-stick pan, flatten with a spatula, and cook on medium for 3-4 minutes. Stir occasionally to prevent burning. Take the crumble out of the pan and set aside to cool.
  2. Sauté the peaches with cinnamon and 1/2 tbsp coconut oil for 1 minute. Cover with a lid and let cook for additional 4-5 minutes or until peaches are soft.
  3. Add the peaches and the crumble to a bowl and enjoy with Greek yogurt.
