Easy Skillet Collard Greens

Ingredients

  • 1 lb. (2 bunches) collard greens,
  • washed and chopped
  • 3 slices lower-sodium turkey bacon
  • 1/2 white or yellow onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 c. low-sodium vegetable broth
  • 1 tbsp reduced-sodium soy sauce or
  • Worchester sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp. pepper
  • 1 tsp brown sugar (optional)
  • 1/2 tbsp. hot sauce (optional)

Instructions

  1. In a large saucepan over medium heat, cook turkey bacon according to package instructions. When finished, remove the bacon but leave the grease in the pan.
  2. Add onion and garlic to the saucepan and sauté for 3-4 minutes.
  3. Deglaze the pan by adding half of the vegetable broth.
  4. Next, add collard greens and stir until slightly wilted, about 2 to 3 minutes.
  5. Add the rest of the broth along with vinegar, soy or Worchester sauce, brown sugar (optional), hot sauce (optional), and spices to the pan. Cover and bring to a simmer over medium heat.
