3-Bean Sweet Potato Chili

Ingredients

  • 4 medium sweet potatoes, chopped
  • 2 tbsp. vegetable oil
  • 1 medium onion, chopped
  • 2 chipotle chiles in adobo, chopped
  • 3 garlic cloves, chopped
  • 1 tbsp. ground cumin
  • 2 tsp. chili powder
  • 1/4 tsp. salt
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (28 ounce) can purĆ©ed tomatoes
  • 2 cups water
  • 5 cups of 3-bean mix (cooked) (2 cups
  • of cooked lima beans, 1.5 cups of pinto
  • beans, and 1.5 cups of black beans)

Optional: top with sliced jalapeƱo, cheddar cheese, cilantro, and fresh lime juice

Instructions

  1. In a microwave-safe dish, combine sweet potatoes and 2 tbsp water. Cover with vented plastic wrap. Microwave on high for 12 minutes or until tender.
  2. Meanwhile, in a 5-quart pot, heat oil on medium. Add onion, chiles, garlic, cumin, chili powder, and salt. Cook for 5 minutes, stirring occasionally.
  3. Add tomatoes and water. Heat to simmering on high. Simmer 15 minutes, stirring occasionally.
  4. Add sweet potatoes to pot along with beans and a pinch of salt. Cook for 2 to 5 minutes, or until beans are hot. Serve with optional toppings (left).
