- In a microwave-safe dish, combine sweet potatoes and 2 tbsp water. Cover with vented plastic wrap. Microwave on high for 12 minutes or until tender.
- Meanwhile, in a 5-quart pot, heat oil on medium. Add onion, chiles, garlic, cumin, chili powder, and salt. Cook for 5 minutes, stirring occasionally.
- Add tomatoes and water. Heat to simmering on high. Simmer 15 minutes, stirring occasionally.
- Add sweet potatoes to pot along with beans and a pinch of salt. Cook for 2 to 5 minutes, or until beans are hot. Serve with optional toppings (left).
